A soft pressing, a cold and static decantation and fermentation at controlled temperature. Aging in steel and in bottle.

Organoleptic properties

At first sight it appears as a straw yellow colour. On the nose hints of yellow pulp fruits and mineral notes. The taste is balanced and well-structured by the right softness.

Serving suggestions

Fresh cheeses, cold cuts and fish soups.
