Vinification and Aging
From a soft pressing and a static decantation to the fermentation at low temperature. Aging at the end of fermentation on the fine lees and at least two years in bottle.
At first sight it appears as a deep brilliant golden yellow colour. On the nose it expresses complex and intense aromas, floral flavours like broom, dehydrated exotic fruit and deep notes of citrus fruit and honey. The taste is dry, warm and soft with a deep persistence which recalls the aroma of nose.
Seafood dishes, white and red meats, medium-aged cheeses.
